richie's birthday!

well, today is richie's birthday, and since i wanted it to be special, i actually got myself out of bed at 6:30 this morning and made breakfast before he had to leave for work. he had requested that i make these really yummy cinnamon biscuits, that i've made several times, which he is rather fond of. i really like them, so i thought i'd share the recipe! they are pretty simple, and really delicious, so here you go!

Sweet Cinnamon Biscuits
2 cups sifted all-purpose flour
1 tbs. baking powder
1 tsp. salt
1/4 tsp. baking soda
1/4 cup vegetable oil
3/4 cup buttermilk (or i use sour milk made with like a tablespoon of vinegar mixed with enough milk to make 3/4 cup)
8 tbs. butter, softened (i actually use light margarine, it's already soft, and has no cholesterol!)
3/4 cup granulated sugar
1 tsp. cinnamon

1. combine flour, baking powder, salt, and baking soda in a med. bowl and mix well. stir in vegetable oil. add buttermilk and stir just until blended.
2. knead the dough on a lightly floured surface until smooth. roll dough into a 15x8 inch rectangle.
3. preheat oven to 400 degrees. Grease a 9-inch round baking pan lightly.
4. spread butter over the dough. combine sugar and cinnamon in a small bowl and sprinkle over the butter. roll up rectangle, jelly roll fashion, starting from one long side. pinch seam to seal.
5. cut the roll into 1 1/2 inch slices. arrange the slices, cut side up, in prepared baking pan. bake until lightly browned, about 15 to 20 minutes.

they are really yummy served with some pancake syrup on the side, and with some fruit. enjoy!

I'll try it today - i would do it today but i don't have sour milk or buttermilk

you make sour milk with vinegar and regular ol' milk
